Instructor Materials: Ingredients for students to prepare some of their recipes or trigger a memory.
Equipment Needs: The Cooking Studio appliances include: five stovetops (some gas, some electric), four commercial convection ovens, a dishwasher, commercial refrigerator, freezer, and a sanitizer. Access to a hearth and two wood-fired ovens (one indoor, one outdoor) is available upon request. Martha Vining has worked in the food industry for 35 years and has been an instructor at the Folk School since 2000. From baking at an island resort off the coast of Maine to writing for Emeril Lagasse, from teaching culinary arts for Job Corps to developing products for an Asheville commercial kitchen, Martha has had a variety of culinary experiences! You may have seen her at one of countless cooking demos at the Biltmore Estate winery or on WLOS's Carolina Kitchen. Martha graduated from the Cordon Bleu, London.
