Student Materials: Please bring the following: - Notebook & pen - Closed-toe shoes to protect your feet from spills and drops - Head covering (hat or bandanna) and/or ponytail holders to keep hair out of food and face - Food storage containers in case of leftovers Please be prepared to visit the gardens to gather produce. You may want to bring sunglasses, a hat, sunscreen, bug spray, a raincoat, etc.

From dill to bread and butter, carrots to peaches, there’s a pickle for everyone! Learn to prepare quick pickle recipes for immediate gratification and also explore longer fermentation processes that create complex, tangy flavors. Examine the role of salt, vinegar, and other ingredients in food preservation. By the end of class, you’ll have the skills and confidence to create a variety of delicious and safely preserved pickled fruits and vegetables.

Kelsey Benoit (she/her) has been working in the food industry for 15 years. She is passionate about expanding access to fresh, local food. An organic farm worker by day and chef by night, she is as farm to table as a person can be. A former Folk School student and enthusiast Kelsey is excited to be teaching her first class at John C. Campbell.
