Student Materials: Please bring the following: - Notebook & pen - Wear closed-toe shoes to protect feet - Head covering (hat or bandanna) and/or ponytail holders to keep hair out of food - Camera (optional) - Anything needed to be comfortable outdoors (sunglasses, hat, sunscreen, etc.) - Food storage containers and a cooler for transporting items home.

Instructor Materials: Goats & containment equipment Goats' milk Rennet & cultures Any additional ingredients not in the school pantry (citric acid, vinegar, salt, olive oil, herbs etc) Special equipment: various cheese molds and forms, cheese cloth, presses, ladles, etc

Christine Owen is the owner, manager and cheesemaker of Spinning Spider Creamery, a farmstead artisan goat dairy in western NC. For over 20 years, her creamery has been run with the help of her family who all contribute to the management of the herd, cheese making, and marketing. Her cheeses have won awards on national and international levels. Along with maintaining a milking herd of champion Saanen, Alpine, and Toggenburg dairy goats, Chris is a director with the American Dairy Goat Association with additional volunteer time spent teaching cheesemaking in the highlands of Guatemala through USAID.
